salted coconut and cardamom hot chocolate
if you’re looking for a fab little holiday drink, this is it.
Hello!
I started to write a really beautiful and eloquent newsletter about the wonder of slow cooking, but then… I got stressed! Can’t imagine why!
To be totally honest, the last few weeks have been kicking my ass, and it looks like the next few weeks will continue to do the same. So, in place of some gorgeous and introspective prose, here are a few quick hits updates and a recipe for some genuinely delicious hot chocolate — if you maybe need that sort of thing!
First of all, I am reading at Happy Endings next week at Makeout Room in San Francisco — if you’re in the Bay and want to hear me read a sweet little story about food and falling in love and finding yourself, you should come!
The week after that, I’ll be heading down to LA to perform my little mayonnaise and monologue routine at Fat Slut (sorry mom). If you’re in LA, come to that!
Then, literally the next day, virgo supperclub is back with a special edition — virgo SOUPerclub. Six courses of all soups!! Lara and I have been dreaming this one up for a while, and I really couldn’t be more excited. I’d tell you to come, but it’s sold out. Sorry!
I’m also private cheffing before and also after and also forever because that’s my job and I really love it and I am really tired but… that’s ok.
Anyway! A few weeks ago (lol), I made some fab little drinks for a party at the Stud called Apres Ski. I made spiced apple cider and salted coconut and cardamom hot chocolate because who doesn’t want hot hot drinks in a hot hot club? Honestly, they were both good, but the hot chocolate was the winner of the night. Here’s a little peek into the party (with the hot cocoa tutorial at the end). If you’re looking for a fab little holiday drink, this is it. Recipe below!
salted coconut and cardamom hot chocolate: ingredients
serves 12-16, depending on how big everyone’s mug is
1 gallon whole milk
1 14oz can unsweetened full fat coconut milk
12oz semisweet chocolate chips
1 cup light brown sugar
1 cup cocoa powder
2 tablespoons vanilla extract
2 tablespoons kosher salt
1/3 cup lightly crushed cardamom pods
salted coconut and cardamom hot chocolate: method
Add whole milk and coconut milk to a large pot of your choice and bring to a gentle simmer over medium heat, whisking regularly to keep milk from scalding.
Once simmering, reduce heat and add remaining ingredients, whisking well until everything is dissolved and uniform (except for the cardamom pods, obviously, those will not dissolve); let the cardamom steep for ~30 minutes over low heat, continuing to stir occasionally.
Strain and serve! Top with a toasted marshmallow or some whipped cream! Throw in a shot of something boozy if that’s your vibe. Share with friends or keep it all to yourself (it’s great the next day over ice!) <3
And that’s it! Full-fat dairy in the club or in your house, or wherever you want. I hope you make it. Let me know if you do!
xox,
Garrett
